BANANA BREAD RECIPE (VEGAN)

Recipe for Vegan Banana Bread. Total Time Required : 60 minutes. Ingredients : 1) Large Ripe Bananas 2) Whole Wheat Flour 3) Sugar 4) Salt 5) Baking Soda 6) Baking Powder 7) Oil 8) Vanilla Extract 9) Cinnamon Powder (Optional) 10) Walnuts / Chocochips / Dry fruits (Optional)

Method :- 1) Preheat Oven at 180° C or 350° F. 2) Take 2-3 large ripe bananas ( 300g or 10.5 ounce). 3) Peel the bananas, slice them and add them in a mixing bowl. 4) Add ½ cup of sugar.


5) Mash the bananas. It should reach a smooth consistency, there should be no chunks . 6) Add ½ cup oil (125 ml) to the mixture. You can use any oil of your preference, I prefer white oil for this though. 7) Stir very well until it forms a nicely blended mixture/puree. 8) Add ½ tsp of cinnamon powder to the mixture and a pinch of nutmeg power. This step is optional, though the blend of cinnamon and nutmeg in the banana bread makes it alot more flavoursome. 9) Add 1 tsp of vanilla extract. 10) Mix the above ingredients well. 11) Sieve 1½ cups of whole wheat flour ( 180g) , ½ tsp of baking soda and 1½ tsp of baking powder. You can even add a pinch of salt to the mixture.

12) Gently fold the dry ingredients into the wet ingredients very well. Do not mix it. This folding step is very essential for the bread batter to form into a good fluffy and soft bread.


13) Add finely chopped walnuts/chocochips/dry fruits of your choice. This step is optional. 14) Gently fold it into the batter again. 15) Pour the batter in a greased or lined loaf pan (8x4x2.5 inches) or round cake pan (8x2 inches).


16) Bake in the preheated oven at 180°C for 35 minutes. 17) Check with a toothpick in the bread. If it comes out clean, your cake is ready. 18) Serve your hot and fresh vegan banana bread with some hot tea or cold coffee.
